Nas didn't coin it because it was being used as an insult before he said it.

@Lord Mecca is on point when he said people we're wondering how much attention artists were paying to message boards in that era and that while Jay/Nas shyt kicked a lot of it off.

The most you can do is give 50/50 credit as @CHICAGO said and even then you remove Em's contribution and there's nothing. Remove Nas' contribution and "Stan" is at bare minimum as prevalent as an insult as any of the other memes spawned from ether/take over and that era in general seeing how it was already message board vernacular.
