So I'm going to play devil's advocate for a second...
Let's say that they actually learn their lesson from Apocalypse and get it together. What could happen in this movie that could redeem the series?
For the roster, I would include mostly the characters from the last one: Cyclops, Jean, Nightcrawler, Beast, and Storm, alongside a recast Wolverine*. Maybe include 1 or 2 more characters from Rogue, Archangel, Colossus, Iceman, Psylocke, or Gambit. Quicksilver has left the group, choosing to seek out and reconcile with his father, Magneto.**
Mystique returns from the last movie, but only to immediately betray the team within the first 20 minutes (or by the end of the first act at the latest, because Mystique is a VILLAIN). They could explain that she was just getting in good with the X-men to gather information and power for her real boss, Mr. Sinister.
Establish the team and all the characters in the beginning, and show them in the Danger Room as the first big action sequence. Afterwards, have Mystique betray the group sell them all out to the Hellfire Club (led my Mister Sinister, alongside a cloned/resurrected Sebastian Shaw and Emma Frost) in exchange for power. The bad guys (Mystique included, because Mystique is a VILLAIN) could take the X-men prisoner and try to tap Jean's powers and use them to attain more power/influence but get the tables turned on them thanks to the X-men like in the comics. After they beat the Hellfire Club and escape, Jean flies out on her outer space rampage, comes back, is subdued by Prof. X, but still put on trial by Lilandra and the Shi'ar Empire for destroying a planet. The story ends with a big, climactic final showdown with the X-men fighting against the imperial guard on the moon like in the original story in the comics.( If they want to keep Sophie Turner for more movies, they can follow the 90's cartoon ending where Jean lives.)***
* I don't care if it's too soon after Hugh Jackman's departure, it's not the Dark Phoenix Saga without the iconic scene of Wolverine slicing and dicing the Hellfire Club goons in the sewers.
** Quicksilver is a cool dude, but he's way too overpowered to be a regular member of the main squad IMO
