Even so, based off of the article, it doesn't appear that black slaves had anything to do with the sandwich which originally comprised of french bread and boiled or fried oysters.

The pulled pork/brisket situation is still murky.
BBQ itself is an influence of african, spanish (barbacoa) and native influences.

Think about it: Paula Deen is selling you food from recipes that she got from Black people. The name "Po Boy" should tell you who invented it.

Refused to eat baloney as an adult but before I quit eating meat I would occasionally fry extra thin slices of turkey lunch meat and eat it on bread with ketchup for that same feel :mjcry:

And just to clarify a bit more.... the original po boy consisted of a French baguette and oysters (fried or boiled). What either sources posted does not make clear is whether or not slaves even had access to French baguettes or oysters. Since New Orleans was a confluence of cultures and influences, without clear or anecdotal evidence, it would be very rich to claim as a fact that it originated amongst blacks.

One thing is clear, we need to be better archivist of our history.

I’ll use either sharp cheddar or American cheese slices and slapped them joints on the pan with buttered up bread and sprinkle shredded parmesan for an extra cheesy/gooey touch, layer it with pure raw honey and add chopped basil leaves and cinnamon for to enhance the sweet flavor. My shyt be torch asf brehs :blessed:

I wanna make it with Gouda cheese or goat cheese one day :ohlawd:

When it comes to black americans, a lot of our stuff was stolen, and only a few older people know the truth. People have to remember it is because of technology that the truth can be seen now, but it wasn't too long ago that people just stole our shyt, and rewrote history. The only way to truly know our history is by talking to older black people who are still alive, and can tell the truth. Hip hop history is early 70's, and we still got a fake story from those who want the credit, so you know it was worse before then!

White foreigners who came here were able to keep their foods because it was pushed by the government to praise white immigration, and over time other immigrants, so they were able to keep their shyt. By the time black immigrants came here in large numbers in the mid to late 70's, black americans fought for our rights to do our thing, and get praise for it, so they also were able to keep their foods.

This is a new country, anything before the 60's is gonna have a few different stories told on them just based on the fact that a lot of stealing was happening being that new money was being made all the time back then, and blacks were at the bottom of society., so no one cared to question the validity of certain claims. If they stole black artists music with no problem, what makes you think food recipes weren't being taken?!

Add to the fact that black people do different things in different regions, and you can see how a thief can steal shyt from black people all over the country, and get away with it back then. It's sad, but this is our story. That's why I'm proud of my people. WE ARE STILL CREATING NEW shyt, WHILE OTHER PEOPLE ARE STILL TALKING ABOUT OLD shyt LIKE ITS NEW!

This is the answer. A little history here:

Prior to the Civil War, the plantation owners would have these huge BBQ festivals. The slaves at the time would be given the cheap, tough cuts to prepare.

Pork Butt, pork shoulder, etc.

They learned to slow cook these cuts over coals. The slaves were typically so hungry that they would "pull the pork" off of the coals when the meat was done and could easily be pulled away from the roast.
