That's not how the world works and you know that. You think the industry has it wrong don't empower it with your dollars.
You ever travel outside the states? That "is" how the world works. I live in Europe and from the Netherlands all the way down to spain, people aint checking for tips. Ive lived in Japan for 4 years and its offensive if you even offer to tip. And i tried to do that shyt at a tgi Friday's in roppongi. How is it that an American restaurant can pay a living wage in another country all the while keeping the food prices around the same but cant do it at home?

Because there is a different government in place with different laws :unimpressed:
Until American citizens at large (CUSTOMERS) take issue with the business model of American restaurants, whether through actual boycotting (unlikely), or making it a central issue in their politics and voting reasons (not happening), y'all know good and damn well it's not as simple as "talk to the employers".

A lot of these bartenders don't want a 'regular working wage', because if they know what they are doing, they will make significantly more in tips than per hour.

I agree that if you go to restaurants or are dealing with the bartender, then you should tip, especially if you are getting great service. Don't be mad when you're ignored if you have a reputation for not tipping.
