Dark souls graphics, cutscenes, and technical prowess are nothing to write home about, in a lot of ways dragons dogma on consoles was much better in those aspects.
I'll give darks souls atmosphere, and more varied worlds, but that's it.

Dragon's Dogma was Capcom and Japanese studios blatant attempt to create their own version of Skyrim as they saw that was the way the money was flowing. Its an open world Western style RPG to its core. All the way down to its bulletin board system to perform side quests
The Souls games/ Bloodborne are more akin to dungeon crawler games like Diablo for example.

i gotta get on that Black IsleDragon's Dogma doesn't really approach any of Souls gitgudness until at LEAST the Everfall dungeon/'post-game'. Until then, its a typical open world slightly above meh experience
Souls slaps you in the mouth right out the gate and somewhat follows those lines the entire game. DD changes drastically from the 1/3 mark onward. Bitter Black Isle > 90% of souls

Skyrim and DD don't play alike at all.You know you had the option to make Skyrim 3rd person too by simply scrolling your middle mouse button lol. So thats one supposed difference debunked.

Dark souls framerate was shyt throughout the game. Blightown was almost unplayable and worse than anything in DD. Art direction is great, but the graphics have always been shyt.Cmon breh, dragons dogma ran like ass on consoles. The only area that was even comparably bad was blightown. And dark souls never had excessive screen tearing and those ugly black bars. Plus the art style in Dragons dogma is bland and dark souls is actually nice. Even when i was hating on dark souls early on I still maintained it was a nicely directed game in terms of visual design.
I don't mind the limited fast travel...if you have a horse or something to speed it up. You don't as far as I can tell, which means I couldn't give a shyt about doing side quests because it becomes a chore.
It also has the effect of levelling up your character too much/giving you too much gold because you are backtracking over easy areas with weak enemies to do said side quests.

I wouldn't point to either game as a good technical performer. And in regards to the question this thread poses you can't point to technical stuff, cause dark souls was a mess too, yet it still took off.
