They do not.and I would put the gameplay of Metal Gear Solid V or something like TLOUpart 2 up against any game you think has ’deeper gameplay’. I;d say outside of Uncharted most sonys first party titles stack up as mechanically in depth as most of the games you‘ve listed in this thread. If not far more.

FFVII has decided to divorce itself almost entirely from its predecessors and tip the whole genre on its head. Taking its cue from a more movie-like perspective, the game seems to delight in pushing almost every boundary of the console RPG forward while still being able to keep the flavour of the original titles intact
The ‘interactive movie’ has long been a dirty term to anyone who values a playable videogame, but FFVII succeeds in coming closer than any title yet

When you say it's a "movie game" you're using the term in a way to insinuate it's a shallow, no depth having "game" that focuses on graphics and cinematics.
