As a parting gift? Well definitely something that is packaged. You can bring some of those Nabisco 100 calorie snack packs, raisins et cetera. If you know how to bake or actually you don't even need to know how to bake, just buy a healthy treat and put it in a cute package. Really its all about the small details...
Now if you just need to make something for a party, there are a variety of healthy skewers that you can make. Another alternative would be to bring dip cups and a bag of baked tortilla chips to go along with them. They are easy to make and what I like about them is that no one has to worry about double-dipping:
Looking at the pics that Libra Lady posted you can do beans...just uncooked. Get some cute little jars and then paste a simple recipe to the front.
