The most important thing for me on a first date is that it's somewhere where we can actually talk and get a feel for each other. Something lowkey seems better for that kind of thing than a fancy first date. I'd rather go get a drink/coffee or hit up a lowkey lounge and, weather permitting, take a walk somewhere than to do a fancy first date. Maybe I'm biased because I'm in NYC, but in my experience, just walking past a bunch of different places will give you both plenty to talk about and you can probably get a better feel for the person from there.
TBH, I feel like a more low key first date also takes the pressure off both parties. And there's no harm done if you two weren't feeling it for whatever reason (she's boring, he's a creep, clashing personalities etc.)
