Never leave your main gig until your side hustle has shown it has legs. Meaning:
Grind 9 - 5 and stack as much as you can whilst spending 5 - 12 working on your side soon to be main gig. Once it gets to a point where its showing consistent returns and you've got a years living expenses saved then make that change but the moment you do that you need to then make your new passion your 9 - 5 whilst spending 5 - 12 creating two more income streams.
Reason being is this:
Security. Its why people take shytty jobs in the first place and when you're self employed its all on you - win or lose - so you have to factor every eventuality and most problems can be offset via having enough cashflow which is why diversification is so important.
Things you've got consider:
Is there a demand for your service that outstrips the supply?
Why would people pay you instead of someone else?
Can you sell your self/your service?
Do you have the right connects?
Do you have the right attitude/temperament to be self employed?
Not everyone is made to be a boss, word to Dame, some people do best working for Another Man. Think about it.
