Man she better not be any older than 24. I don't miss conversations like that at all. You have to figure out whether she seriously expects you to change (which doesn't make sense) or if she needs to be fake coerced into getting it popping. I'd probably do ONE vegan dinner date, and if that's not enough then stay away from her.
