just made a batch. Good god. Im not and never have been keto but its a cool way to slash calories if you use the right ingredients.

ill never understand the keto lifestyle though, where people consume the same amount or more calories than normal foods.

i had a homeboy make some ribs and ribeyes with almond flour cheese danishes. Dude easily consumed 2000 calories in that meal.

Yesterday was leftovers as well. Leftovers are very important for Keto for me. Meal planning is helpful b/c it’s so convenient to be able to pop something already prepped on the stove.


-For brunch I had a Premier chocolate protein shake
-A gallon of water
-I had the last of the pan seared garlic teriyaki salmon (make teriyaki sauce sugar free with soy sauce and sugar substitute and ginger)
And a loaded salad.
-Another protein shake

So far I’ve lost 12 pounds in last 6 days.

Today was rough b/c I woke up with cramps from my cycle. I didn’t get out of bed until 1:00pm. So when I finally drank a protein shake, I felt nauseous. Also your cycle can make cravings horrible. I have the craziest craving for Coco puffs:russ::mjlol:
Anyhoo, I made some pizza dough last night. So I just scrambled some eggs and cooked some keto sausage gravy.
I’ll be having breakfast pizza and tomato and cucumber salad for dinner. Each slice is 3 net carbs.

Here ya go
Ingredients:
  • 3/4 cup warm water OR 1/2 cup warm water IF using xanthan gum / psyllium husks
  • 1 1/2 tsp dry active yeast (I used quick-rise yeast)
  • 1 tsp white sugar (THIS WILL BE EATEN BY THE YEAST, IT IS NECESSARY, it will not affect the final product)
  • 1/4 cup(60g) 14% sour cream
  • 2 tbsp olive oil
  • 1 1/2 cups(168g) almond flour
  • 1/2 cup(64g) Vital Wheat Gluten OR 1 tbsp xanthan gum & 1/4 cup ground psyllium husks
  • 1/4 cup(30g) coconut flour
  • 1/2 tsp salt
  • 1-2tsp Italian spices (optional)

Directions:
  1. In a large bowl, add your warm water, yeast and sugar. Let sit for about 5min.
  2. While waiting, combine all of your dry ingredients in a separate bowl (whisk with a fork), set aside.
  3. In another small bowl, microwave your sour cream for roughly 20-25s (just until slightly warm).
  4. Once your yeast has foamed(make sure it is not old!), add your olive oil and sour cream and stir together.
  5. Next stir in your flour until a dough begins to form.
  6. Use your hands to knead the dough for roughly 3-4min.
  7. Form the dough into a neat ball and place in a greased bowl. Cover with saran wrap and place somewhere warm for 40min (I usually heat my oven to a low-temp for a while before-hand then shut it off and leave the dough in there either with the door open or closed depending on how hot it is).

  8. After 40min, pre-heat your oven to 450*F(Or 400*F for thicker dough).
  9. Remove the dough from the bowl(it should now be about 1.5x its original size or larger(less if using the xanthan gum/psyllium version)).

  10. On a baking sheet lined with parchment OR greased with oil, roll out into desired shape and thickness(I would have done mine just a little thinner if I had the option to do it over!)

  11. Brush with olive oil(optional) and either..top with whatever your heart desires then bake for about 10-12min or until lightly browned for a THIN CRUST. OR for a thicker crust, bake at a lower temp (350-400*F) until partially cooked, then add your topping and place back in the oven at 450*F to finish cooking! Enjoy the best low-carb pizza crust!

I topped mine with low-carb barbecue sauce(this one), barbecue chicken breast chunks, basil, oregano, garlic powder, grated parmesan cheese and mozzarella.

Day 8:
So I made it through Week 1. I’m feeling better. But my cycle happened in the middle of it so energy levels are still meh. However I will say cramps were less. Maybe the lack of sugars did it.

Anyhoo, I also need to add more food to get more protein.

So today here’s what I ate

-keto pancakes, 2 sausage links, lakanto sugar free syrup-
-Premier chocolate protein shake
-Breakfast pizza and salad
-A gallon of water
-vodka cran-Apple cocktail

I still need to eat a bit more b/c I also did a 2 mile hike this morning. Felt like I was gonna pass out when I got back.:mjlol:

So my friends and I decided to try this challenge during quarantine. I’ve been doing vegan recipes for a minute so this might be a change. But the month of May we are doing Keto.

So we will not eat over 20 carbs per day. No sugars, breads, rice or potatoes. All meats will be organic or grass fed. Eggs are cage free pasteurized eggs. Each day I will post the recipes I’m cooking. Eating starts at 11:00am and ends at 6:00pm.


Day 1: (Started yesterday)
Breakfast/Lunch-Vanilla low carb protein shake.
Dinner-Pork Belly Ramen with shiratake noodles.

Pork Belly can be found at most grocery stores. I learned how to cook it when I lived in Asia. It’s a very fatty cut of meat and was recommended by some other keto people I’ve talked to.

It’s basically like a thick ass piece of bacon.

Put ramen seasoning packets in the slow cooker with water beef broth, pork seasoning, miso and Splenda.

Rub a bunch of seasonings on pork belly and brown in skillet on both sides for a couple of minutes. Put it into the slow cooker along with some drippings and cook for 50 minutes and stick it in the oven. Take it out, add more seasonings and bake in oven until browned on each side.

Take shiratake noodles out and rinse them. Put them in a pot and pour slow cooker soup base over them. Simmer on medium heat for 10 minutes.

Put into a bowl. Put a piece of pork belly over it. Garnish with whatever stuff u like in ur ramen as long it doesn’t add to carb count. Boiled eggs, seaweed, tofu, green onions, bamboo.
The pork belly has no carbs, the shiratake noodles have 3 net carbs. Otherwise just watch any soup bases u might use.

Im learning that sugar seems to be in EVERYTHING.

If ur vegan you can do sautéed tofu instead of pork belly but I don’t know how vegan keto would work.:jbhmm: I’m sure somebody somewhere is doing it tho.
Ah well. I’ll post daily updates and recipes.

Week 1 Dinner
Pork Belly Ramen
Spicy sausage cabbage rolls
Butter thyme ribeye steak and loaded Greek salad

Suggestions and experiences with Keto are welcomed!
Ramen isnt keto and your dumbass probably will never be in ketosis.You need MCT oil and fasting in your life.
