Day 9
Yesterday was Day 9 on week 2 and I gotta LOT more energy. This week is totally fukking different from last week. Feel so much better.
Yesterday here’s what I ate:
Breakfast-11:00am
-Premier Protein cafe latte flavored shake
Brunch-1:00
-Hazelnut coffee-2 tbsp heavy cream and monk fruit sweetener
-Veggie egg omelet. 1 egg/1 egg white, 2 cups spinach, 1/2 mushrooms, 1/2 onions, 1/2 imported feta and aged cheddar. Salt, pepper, butter, garlic and onion powder.
-One pasture raised sausage patty (whole foods)
Dinner-5:00pm
-6 oz butter/thyme ribeye steak
-Side Greek salad-(romaine, spinach, feta, boiled eggs, tomatoes, cucumbers, sun-dried tomatoes, peppers tossed in two tbsp of Olive Garden Italian dressing.)
-Baked Jicama (‘
hick-ka-ma) fries- These took a LOT of work but were tasty in the end. Jicama is a tuber jokingly called a “Mexican” potato. But really to me it tastes and crunches like an apple. It has very few carbs and with some work you can make fries with them. They are actually pretty tasty raw too.
The problem is all the white people recipes online were NASTY when I tried them a few years ago. So I doctored em.
First I boiled these hard ass motherfukkers in low sodium beef broth, water, garlic powder, onion powder, vinegar, any other seasoning in my pantry, (Ms. Dash, Lowerys). EVERYTHING.
I boiled them for an hour. STILL HARD AS FUKK. But tasty. They soaked up the flavor beautifully. So I kept boiling them motherfukkers.
STILL HARD! Finally, they began to be a little less hard.

But still a little hard.
Afterwards, I experimented with two different batches. Baked and deep fried. Both results were delicious. Sprinkle a little Parmesan cheese and parsley on them and good stuff.
I blanched and froze the deep fried and the rest for another day.
A handful of Baked jicama fries is like 3 carbs.
