Thats the conflict... I talked to a therapist buddy of mine n he basically told me that I need to explain to her that, Yeah I see you at work but I also want "fun time" with you.. Ive explained but I still get flaked on here and there...

Not much you can do except let it play out. The fact you explained it to her and it still happens is a little concerning.
She may be the type to need that separation. I can't fault her for that.
